Homemade Salsa Fresca and Guacamole

Soooo easy!!

Ingredients:
7 Roma tomatoes
1 bunch of cilantro
1/2 brown onion
salt to taste

Cut each up as small as comfortably able to do (not TOO small). Then mix them together and chop them together until very "mooshed" together :) Add salt to taste (remember the chips probably have salt on them). The trick to this salsa is to get the sizes right (teeny onions but not too small of tomato chunks), and add lots of salt -- keep adding until it tastes good (unless it tastes too salty, then the problem is something else!). Also great for adding to avacados for guacamole (I add some salt, garlic salt, and salsa fresca to avacados).

I eat these with Tostidos brand Restaurant Style chips (one family-size bag is the perfect size for this much salsa, for us) -- something about that combination!!!


Frittatas

"With Frittata you sauté your veggies in the pan first, then whisk your eggs and pour them over the veggies. Scramble them a little, then throw some cheese on top and broil for a minute or two. I use about a dozen eggs when I make one, mostly egg whites, with one or two yolks. Very yummy!"
